We were staying with the cousins of my husband's brother during our time in Seattle She made these potatoes washed for breakfast with scrambled eggs along with French Toast. It was so simple to me when she cooked the potatoes, that I've also made them in this way since!

Breakfast potatoes are the ideal accompaniment to eggs, sausages, or bacon. Like Hashbrowns they require only the ingredients you already have in your pantry.


  • Potatoes I prefer Yukon Gold Potatoes, but any potato is a good choice (red potatoes as well as russet potatoes and some sweet potato varieties, although they'll be less crisp). They are best removed, but you can scrub them to remove dirt and keep the skin on.

  • Preheat to 400@F. Prepare a large, baking sheet with a rim (13x18) by using parchment, or Silpat Thenprepare your potatoes washing peeling, dicing and cutting them into half" cubes. I like the large blades of this food processor (which is a major time-saver for breakfast potatoes as well as for the majority of our salads chopped)

  • add diced potatoes in an big bowl and mix with 3 tablespoons oil. Sprinkle with 1 teaspoon salt, 1 teaspoon paprika and 1/4 teaspoon black pepper. Then mix to mix and evenly coat the potatoes.

Pro tip:

These crisp breakfast potatoes make a great an appetizer for breakfast. Try adding them in your Breakfast Tacos and Breakfast Burritos right before serving. You can also spoon the portion onto a platter and add the gravy of sausage over it.
